(或中筋麵粉110克)
酵母5克
室溫牛奶70克
糖10克
②
高筋麵粉220克
(或中筋230克)
牛奶100克
雞蛋1個(帶殼65或蛋液56克)
鹽4克
白糖20克
無鹽黃油40克
黃油蒜蓉醬:
蒜泥20克
無鹽黃油50克
海鹽0.5克(或鹽0.5克)
表面:
馬蘇里拉奶酪 60克
歐芹碎(沒有可以不放,或改成小蔥)
185°C/或365°F
18~20分鐘
Tips:
*①麵團和②麵團分別和好面到沒有幹麵粉
*麵團①發酵1小時(室溫30°C),麵團②靜置水合
*麵團①和②,加入黃油後手揉8~10分鐘
*麵包整形完成後發酵50~60分鐘(30°C室溫)
*桿捲麵團頂部寬約10釐米,長40~50釐米

(* or all purpose flour 110g)
Instant yeast 5g
Room temperature milk 70g
Sugar 10g
②
Bread flour 220g
( *or all purpose flour 230g)
Milk 100g
Egg*1(65g with shell/or egg liquid 56g)
Salt 4g
Sugar 20g
Unsalted Butter 40g
Garlic butter sauce :
Garlic 20g
Unsalted Butter 50g(softened)
Salt or Sea salt 0.5g
Surface:
Mozzarella cheese 60g
chopped parsley (optional)
185°C/ or 365°F
18~20 minutes
Tips:
*①Dough and ②Dough are respectively mixed well until there is no dry flour
*Dough ① ferment for 1 hour (room temperature 30°C), dough ② stand to hydrate
*Dough ① and ②, add butter and knead by hand for 8-10 minutes
* ferment for 50-60 minutes after bread finish shaping (room temperature at 30°C) in tray.
*The top of the stick roll dough is about 10cm wide and about 40~50cm long
