One of my favorite steak sauces - a creamy chili sauce made with brandy or cognac, beef broth, cream and lots of crushed pepper. Creamy chili sauce has been a constant on my steakhouse visits throughout my career. After swapping my suit and tie for an apron, I no longer have company lunches. I will make steak at home!

There are some truly delicious sauces in this world that are deceptively simple to make, and this creamy chili sauce for steak is one of them. Here's a super easy sauce that requires few ingredients for a quick overnight: Cook the steak to your liking, then remove and let sit while you make the sauce.

Make sauce in the same pan, add brandy or cognac, simmer rapidly for 1 minute until the alcohol smell is gone; Add beef broth/stock, and simmer rapidly until it reduces by half (intensifies the flavor); Stir through cream and crushed peppercorns. Serve over steak! The alcohol brings incredible depth of flavor to the sauce, it’s the secret ingredient. Classic creamy peppercorn sauce is made cognac or brandy, but I’ve made this plenty of times with marsala too. I love them all!

Using freshly crushed peppercorns are best for a great pepper flavor. Or use canned green peppercorns for less heat.
