我們想與大家分享如何在家用氣炸鍋與烤箱做出免揉免手套膜的泡泡麵包
We would like to share with everyone how to make the no-knead bubble bread with airfryer & oven

主要食材【Main Ingredients】
1)牛奶 120克【Milk 120g】
2)雞蛋 1粒【Egg x1】
3)白糖 20克【Sugar 20g】
4)即發乾酵母 3克【Instant Dry Yeast 3g】
5)高筋麵粉 200克【Bread Flour 200g】
6)鹽 2克【Salt 2g】
7)無鹽牛油 15克【Unsalted Butter 15g】

方法【Method】:
1) 加入一粒雞蛋,120克牛奶,3克即發乾酵母,20克白糖,攪拌均勻【Add in egg x1, milk 120g, instant dry yeast 3g & sugar 20g, mix it well】

2)把2克鹽與200克高筋麵粉一起攪拌均勻後,加入蛋糊攪拌均勻至無粉粒【Mix the 2g salt with 200g bread flour. Add the mixture into batter & mix till no flour seen】

3)加入融化後的15克無鹽牛油於麵團中,然後攪拌均勻【Add the 15g melted unsalted butter into dough, then mix it well】

4)麵團蓋上保鮮膜後,放置發酵至兩倍大【Wrap the dough & ferment it until doubled in size】

5)往發酵後的麵團與墊子撒上一些高筋麵粉,然後把麵粉分成3份。1份給氣炸鍋食譜,另外2份給烤箱食譜【Sprinkle some bread flour on the dough & mat. Then cut the dough into 3 portions. 1 portion for air fryer recipe, another 2 portions for oven recipe】

6)烤箱食譜(Oven Recipe):
a) 把麵團平均切開後反覆折起,然後滾成圓形【Cut the dough evenly, fold it for few times & roll it into small bubble shape】
b) 每個泡泡麵團需要間隔一些空間【Each bubble shape dough need to leave some space in between】
c) 放置發酵至兩倍大,然後塗上牛奶【Place it to ferment to double the size,after that spread on some milk】
d) 放入預熱烤箱烘烤15-18分鐘(160度C)【Bake in preheat oven for 15-18min in 160C】
e) 完成後塗上融化後的無鹽牛油【After Baked spread on some melted unsalted butter】

7)氣炸鍋食譜(Air Fryer Recipe):
a) 把麵團平均切開後反覆折起,然後滾成圓形【Cut the dough evenly, fold it for few times & roll it into small bubble shape】
b) 每個泡泡麵團需要間隔一些空間【Each bubble shape dough need to leave some space in between】
c) 放置發酵至兩倍大,然後塗上牛奶【Place it to ferment to double the size,after that spread on some milk】
d) 蓋上鋁箔紙後放入預熱的氣炸鍋先烤10分鐘160度C【Over with Aluminum foil, then put in preheat air fryer for 1st bake in 10min 160C】
e) 10分鐘後打開檢查,然後把鋁箔紙拿掉再烤5-8分鐘(第二次時間自行調整)【Check after 10min, then remove the aluminum foil and continue air fry for another 5-8min (adjust accordingly)】
f) 完成後塗上融化後的無鹽牛油【After Baked spread on some melted unsalted butter】

8)完成 【Completed】
