A light and delicious recipe for the summer prepared by @Rafael Nistor 😃
INGREDIENTS (2 SERVINGS)
4 Slices of veal
4 Slices of cheese
4 slices of speck
10 cherry tomatoes
100g. Corn
Mixed salad
Extra virgin olive oil
Salt and pepper
Take the veal slices and beat them well in order to break the fibers of the meat and make it softer. On each slice add the speck and cheese, roll them up and seal them with a toothpick.
Take the cherry tomatoes, wash them and cut them in half or in quarters, as you prefer. Place them in a bowl with the mixed salad and cooked corn drained from their water and rinsed with cold water. Season the salad with water, salt, pepper and extra virgin olive oil. Mix everything well and let it rest in the refrigerator.
Meanwhile, in a non-stick pan, add a drizzle of oil and heat it well. Add the veal rolls and cook for about 8 minutes on all sides.
Take a plate and add the salad to the center two rolls on top and to finish with a nice round of extra oil. An excellent dish for the very hot summer days.
