我从小看妈妈裹粽子,一直以来都没好好认真学过客家枕头粽包法,这次回乡,把一切都学会,把妈妈的这门手艺传承下来。
我家乡的粽子比较特别,就是喜欢加入红丝线(红蓝),来填增肉粽的香气,这种肉粽,你们有吃过吗?

分量:大概52粒左右

材料:
2公斤 白糯米
1.5公斤 五花肉
400克 蒜米碎
500克 葱头片 (炸成葱酥)
400克 红蓝/红丝线
500毫升椰浆
26粒 咸蛋 (切半)
500克 红豆
15粒 冬菇 (1粒切成4片)
适量 粽叶
适量 草绳
52粒 栗子


调味用料:
黑酱油
蚝油
2包五香粉


胡椒粉

做法:

竹叶和水草(隔夜浸泡在水里,煮15分钟,之后将竹叶清洗干净,沥干水)

糯米2公斤(洗净,浸水2个小时)
糯米:热锅,加入葱头油,放入糯米,放入葱丝,1汤匙盐、500毫升椰浆,500克红豆,把糯米炒匀即可捞起

馅料:

A)焖猪肉冬菇:(热锅,加入食油,放入一半蒜头碎爆香后,加入猪肉炒匀,入2汤匙黑酱油、2汤匙蚝油、2包五香粉、1汤匙胡椒粉、2汤匙白糖,加入冬菇一起再伴炒一下,加入红丝线炒匀,加入1小碗清水,焖煮30分钟后,捞起备用)
B)栗子:(栗子加水浸半小时,用夹子去皮,清理干净,加入适量水煮20分钟至栗子变软)
C)26粒咸蛋黄,切一半,备用

裹好的粽子放入大锅中煮大约3小时即可

红蓝/红丝线 Magenta Leaf plants(学名:Peristrophe roxburghiana):
红丝线除了可以入药,也可以加工一些美食做染料用,除了可呈现出天然的深红色,也会有很特别的香味。
它具有清肝降浊、清肺止咳、散瘀消肿止痛之功效,常用于肝火上炎、高血压、痰浊、高血脂、糖尿病、肺结核咯血、肺炎;外用治跌打损伤肿痛。

The Hakka Rice Dumpling (zongzi) in my hometown are quite special. They like to add Magenta Leaf plants to fill in the aroma of the meat zongzi, Have you ever tried this meat zongzi?

Serving: about 52pcs Hakka Rice Dumpling

Ingredients:
2kg white glutinous rice
1.5kg pork belly
400g chopped garlic
500g sliced ​​shallots (fried into crispy shallots)
400g Magenta Leaf plants
500ml coconut milk
26pcs salted eggs (cut in half)
500g red beans
15pcs shiitake mushrooms (1 cut into 4 pieces)
Bamboo leave
Straw rope
52pcs chestnuts


Seasoning:
dark soy sauce
oyster sauce
2 packets of five spice powder
sugar
Salt
white pepper

practice:

Bamboo leaves and Straw rope (soak in water overnight, cook for 15 minutes, then wash the bamboo leaves and drain)

2kg glutinous rice (washed and soaked in water for 2 hours),
Glutinous rice: Heat a pan, add shallot oil, add glutinous rice, shredded shallots, 1 tablespoon of salt, 500 ml coconut milk, 500 grams of red beans, stir fry the glutinous rice well and remove

Filling:

A) Braised Pork and Mushrooms: (Hot a pan, add cooking oil, add half of the minced garlic and saute until fragrant, add pork and stir well, add 2 tablespoons of dark soy sauce, 2 tablespoons of oyster sauce, 2 packets of five-spice powder, 1 tablespoon of pepper, 2 tablespoons of sugar , add mushrooms and stir fry together, add red shreds
Then add red silk and stir well, add 1 small bowl of water, simmer for 30 minutes, remove and set aside)
B) Chestnuts: (soak the chestnuts in water for half an hour, peel them with a clip, clean them up, add an appropriate amount of water and cook for 20 minutes until the chestnuts become soft)
C) 26 salted egg yolks, cut in half, set aside

Put the wrapped dumplings in a large pot and cook for about 3 hours

Magenta Leaf plants (scientific name: Peristrophe roxburghiana):
In addition to being used as medicine, Magenta Leaf plants can also be processed into some delicacies as dyes. In addition to showing a natural deep red color, it will also have a very special fragrance.
It has the functions of clearing the liver and reducing turbidity, clearing the lungs and relieving cough, dissipating blood stasis, reducing swelling and relieving pain.
