It is a custom to drink hot tea after eating a full meal of sushi at a sushi restaurant. But for some reason, the tea served at sushi restaurants is called あがり agari and never called tea.
Agari typically means “to end” or “to be chosen”… Why do restaurants use this word for tea? Actually, this has something to do with the culture of yujyo prostitutes and geisha.
Since prostitutes and geisha were basically appointed by customers, if they were not popular, there was no work for them. The job of such unsold prostitutes and geisha was to grind tea. On the contrary, popular prostitutes and geisha were allowed to “go up” to the tatami room where the guests are, and were called “Oagari-san.”
In other words, tea has the unlucky meaning of " remaining unsold," which is why sushi restaurants began to call it "Agari" instead.
However, I couldn't figure out why sushi restaurants suddenly adopted the red-light district culture... What do you think is the reason?
