春節來臨,又不想吃太多變胖,不如來做一份低糖的生酮湯圓吧。很多人喜歡用椰子粉做湯圓,但是這樣的湯圓不但口感很差,而且容易變形,我個人還蠻難接受的。可是糯米粉做的湯圓也太容易胖了,糯米粉本身的熱量加糖和黑芝麻簡直是體重炸彈啊。所以,我打算用細豆渣粉做個低碳水版本的湯圓,味道非常接近的生酮湯圓,而且口感很細膩,軟糯。雖然無法媲美糯米粉的q彈,但也是個很好的替代品喔。低糖版每份150~90卡左右。如果用糯米粉做同樣的份數,那每份的熱量大約在292~175卡左右。所以低糖版本的熱量是原本的一半。代表我們可以享受雙倍的快樂唷!其實不會啦,豆渣粉膳食纖維很高的,吃3顆就會感覺很飽了。

配量 (6~10份) 每份 (150~90卡)
黑芝麻餡料材料:
- 黑芝麻粉 40g
- 赤蘚糖醇粉 30g
- 水 1 tbsp
- 黃油 30g

花生料材料:
- 熟花生粉 40g
- 赤蘚糖醇粉 30g
- 水 1 tbsp
- 黃油 30g

湯圓皮:
- 片栗粉 5g
- 細豆渣粉 20g
- 洋車前子粉 3g
- 水 120 ml

糖質;3.1g 每份


The Spring Festival is right around the corner, I don't wanna gain a lot of weight. So I've decided to make some delicious keto mochi or keto tangyuan for myself. Many people like to use coconut flour to replace glutinous rice and psyllium powder, but this kind of keto rice balls not only tastes bad, but also easily deformed. I personally find it difficult to accept. But if I use glutinous rice flour, it has way too much carbs. The calories of glutinous rice flour, sugar and black sesame seeds are simply a carb bomb. Therefore, I plan to use fine okara flour to make a low-carb version of glutinous rice balls. The taste is very similar to the real rice balls, and the texture is very fine and soft. Although it is not as chewy as the actual glutinous rice flour, it's probably the best alternative I've ever tried. The low carb rice ball is about 150 to 90 calories per serving. If glutinous rice flour is used for the same number of servings, the calories per serving are about 292 to 175 calories. So the low carb version has half the calories. That basically means we can eat more (like double the amount we are supposed to eat!!!) Nah, Okara flour is high in dietary fiber so it's actually VERY filling.

(6~10 servings) per serving (150~90 cals)
Black sesame filling:
- Black sesame powder 40g
- Erythritol powder 30g
- Water 1 tbsp
- Butter 30g

Peanut filling:
- Roasted peanut flour 40g
- Erythritol powder 30g
- Water 1 tbsp
- Butter 30g

Tangyuan/Mochi:
- Potato starch 5g
- Fine Okara flour 20g
- Psyllium powder 3g
- Water 120 ml

Total Carbs: 5.2~ 3.1g per serving
