Usually chefs use a charcoal stove to cook the rice in the casserole first, then add the ingredients and steam them slowly over charcoal fire, which takes about half an hour. However, most restaurants now use gas stoves to steam claypot rice, or cook the rice in the gas stove first, and then steam the ingredients on the charcoal stove when customers order food, in order to save time.
