娘惹阿扎鱼
Nyonya Acar Fish (Acar Hu)

材料:
4条 黄尾鲹(俗称色拉鱼)
2汤匙 黄姜粉
1茶匙盐

**混和均匀,腌制半小时,过后以中火炸熟至金黄香脆,捞起,沥除油份,备用

辅料:
100克 老姜(切丝)
2小块 黄姜 (切片)
5-6瓣 蒜头 (切片)
2条 红辣椒 (切段)
3 青辣椒 (切半)

调味料:
4汤匙 白醋
1茶匙 盐
5茶匙 白糖
少许 阿三膏 (挤水,备用)

Nyonya Acar Fish (Acar Hu)

Ingredients:
4 Yellowtail scad (commonly known as Ikan Selar Kuning)
2 tbsp turmeric powder
1 teaspoon salt

材料:
1只 猪脚 (约1.5公斤,砍块)
半支 黑醋 (约 140ml)
半支 添丁甜醋 ((约 250ml)
200克 姜 (切小块,拍扁)
2 粒 蒜米 (拍扁)
7-10条 辣椒干
60克 冰糖
半茶匙 盐
大约 400ml 清水

**另外准备少许葱/和姜让猪脚去除腥味

**猪脚醋 可以根据自己喜欢的酸甜度调整。
