陝西麵食花樣多是出了名的，比如今天這道傳統的麻食，中間薄、邊上翹，酷似貓耳，因此也叫作“貓耳朵"。陝西麻食最經典的烹飪方法就是燴，用上番茄、馬鈴薯、胡蘿蔔、豆芽等小火慢煮，收到湯汁濃郁微酸，再淋上辣子和香醋，這個味兒嫽扎咧（陝西方言，好極了）！
