陝西麵食花樣多是出了名的,比如今天這道傳統的麻食,中間薄、邊上翹,酷似貓耳,因此也叫作“貓耳朵"。陝西麻食最經典的烹飪方法就是燴,用上番茄、馬鈴薯、胡蘿蔔、豆芽等小火慢煮,收到湯汁濃郁微酸,再淋上辣子和香醋,這個味兒嫽扎咧(陝西方言,好極了)!
Shaanxi is known for a variety of pasta, and mashi is one of them. The small balls made from flour are thin in the center and curly on the rim, thus are also called cat’s ear. Hui Mashi is the most classical recipe for mashi. The balls are stewed together with tomatoes, potatoes, carrots and bean sprouts over low heat until the mixture becomes thick, rich and slightly sour. Finally top with chili oil and Zhenjiang vinegar. The taste is great!
