Recipe for Cheeky Peach Macarons (makes 30)
Ingredients:
For Macarons:
100 grams white granulated sugar
4 grams egg white powder (optional, see notes below)
100 grams egg whites
105 grams almond flour
105 grams powdered sugar
For Peach Condensed Milk Buttercream:
550 grams butter
395 grams sweetened condensed milk
410 gram can sliced peaches in syrup, pureed
Peach food coloring
Peach jam (optional)
Instructions:
Preheat the oven to 248°F (120°C).
Prepare a baking sheet with a silicone mat or parchment paper.
In a bowl, sift together 105g almond flour and 105g powdered sugar through a mesh sieve. Set aside.
In a mixing bowl, combine 100g egg whites, 100g sugar, and 4 grams of egg white powder (optional). Heat the mixture to 122°F (50°C), whisking constantly.
If using egg white powder, whisk it together with the sugar to remove clumps before adding egg whites.
Add the dry ingredients (almond flour and powdered sugar mixture) into the meringue and fold gently until just combined (macaronage).
Divide the mixture into separate bowls and add food coloring as desired for the cheeky colors.
Transfer the mixture into piping bags and pipe small circles onto the prepared baking sheet.
Tap the baking sheet gently to remove air bubbles.
Let the piped macarons dry in the open oven at 248°F (120°C) for 4 minutes.
After drying, increase the oven temperature to 285°F (140°C) and bake the macarons for 20-22 minutes, or until they develop feet and are set.
Remove from the oven and let cool completely before filling.
For the Peach Condensed Milk Buttercream:
In a mixing bowl, cream 550g butter for about 1 minute until smooth.
Gradually add in 395g sweetened condensed milk while continuing to mix for another minute.
Add the pureed peaches from the can (about 410g) and mix until fully combined. The mixture may look curdled at first.
Mix the buttercream for 5 minutes or more until it comes together and becomes smooth.
Add peach food coloring to achieve the desired color.
Optionally, mix in peach jam for extra flavor and texture.
Assembly:
Match up similar-sized macaron shells.
Pipe or spoon a dollop of peach condensed milk buttercream onto one shell.
Sandwich with another shell and gently press together.
Repeat with remaining macaron shells and filling.
Serve and enjoy these cheeky peach macarons!
