»月饼馅料可以随意用喜欢的果仁代替,不过总重量要准确一样噢。
»如用不同月饼磨具,请用比率来算。例子(100克磨具):
饼皮=25/80x100=31克
馅料=55/80x100=69克
»Mooncake fillings can be interchanged using the nuts that u prefer, but total weight must be accurately the same.
»If use different mooncake mould, please use ratio to calculate. Example (100g mould):
Crust=25/80x100=31g

Cookies们,以上有我各式的月饼食谱Playlist, 点击来看哦~今天做个很多人询问的“五仁月饼”。之所以称为“五仁”就是因为传统馅料里由5种不同的花生仁而主成,再经过改良后,现在的五仁月饼还加了不同的果仁,今天我用了冬瓜糖,蔓越莓干,糖柑橘皮,不只加了酸甜口味,还加了另一层次的天然颜色。外皮是传统广式月饼的饼皮,会回油的,把饼皮内馅味道融合在一起,使饼皮柔软光亮。3天回油后,切开来,内部结构好漂亮,密密麻麻各式果仁的切口。

Hi Cookies, above is my variety of Mooncake recipe’s Playlist, Click to watch them~ Today, I am making "Five Nuts Mooncake" that many people asked about. The reason why it is called "Five Nuts" is because the traditional filling is literally made of 5 different kinds of nuts. After improvement, the Five Nuts Mooncake now have different dried fruits added. Today I used candied winter melon, dried cranberries, candied orange peel, not only added sweet and sour taste, but also added another level of natural color. The outer crust is the traditional Cantonese Mooncake crust, which will return oil, blending the flavors of fillings and crust together, making the crust soft and shiny. After 3 days of oil return, it was cut open, the interior texture is so beautiful, with densely packed cross session of various nuts.

1颗 蛋黄
1汤匙水

(上下火,不开旋风,中层烤)
(第一烤) 预热烤箱165C: 5分钟
(第二烤) 预热烤箱165C: 5分钟
(第三烤) 预热烤箱165C: 10分钟
(收在密封容器,室温回油3天)

90g All Purpose Flour
0.5g Salt

24g Almond
24g Pumpkin Seeds
24g Sunflower Seeds
24g Melon Seeds
12g White Sesame Seeds
12g Black Sesame Seeds
18g Candied Winter Melon
18g Dried Cranberries
18g Candied Orange Peel
12g Peanut Oil
6g Sesame Oil
48g Golden Syrup
18g Castor Sugar
1.5g Salt
48g Koh Flour/Cooked Glutinous Rice Flour
24g Water

=Egg Wash=
1 Egg Yolk
1Tbsp Water

(Top Bottom Heat, No Fan Force, Middle Rack)
(1st Bake)Preheated Oven 165C: 5minutes
(2nd Bake)Preheated Oven 165C: 5minutes
(3rd Bake)Preheated Oven 165C: 10minutes
(Store in airtight container, return oil for 3days at room temperature)
