一碗麵好不好吃,得看麵條、湯底、臊子地不地道。陝西人在吃麵上就絕不含糊,從武功縣特產的旗花麵上就能感受到:麵選細麵,每碗只需一筷頭;湯底用老母雞湯,調味酸香打頭;臊子則用山珍海味,點睛的蛋皮切成菱形,和蔥花一同浮在湯上,挑起如旗,放下是花,美得很!
Noodles, base soup and saozi are 3 key elements for a bowl of noodles. Shaanxi people are particular about having noodles, which can be reflected by Qihua Noodles, a specialty of the Wugong County. Thin noodles which can be held by a pair of chopsticks are cooked and chicken stock is used as the base soup. The taste is highlighted with sour. The saozi is made from ingredients from sea and mountains. The diamond-shaped egg skin and chopped scallion floating on the surface resemble flowers and the noodles pulled from the bowl look like a flag. Amazing!
