黑椒薯仔牛肉粒
最近冇得出去大排檔, 但都可以在家整個家庭版的黑椒薯仔牛肉粒, 簡單快手又好食

食材:
蒜頭...3瓣
洋蔥...1個
蔥...2條
牛肉 ... 1磅
薯仔...2個
油... 適量

牛肉醃料:
生粉...1湯匙
料酒...1湯匙
生抽...1湯匙
老抽...1/2湯匙
黑胡椒粉...1/3茶匙

醬汁:
生抽...2湯匙
老抽...1湯匙
蠔油...1湯匙
brown sugar...1茶匙
黑胡椒粉...1/2茶匙
水...100ML

做法:
1. 將牛肉切大塊, 落牛肉醃料
2. 另用一個豌仔整醬汁
3. 開大火, 鍋上落多少少油, 用半煎炸方式煎牛肉, 煎2.5-3分鐘或每邊金黃後先拿出
4.將薯仔放進煎至金黃後拿出
5. 倒出多餘的油, 只留適量的油在鍋中, 落蒜頭及洋蔥爆香
6.洋蔥變色後加入薯仔, 牛肉和醬汁, 用中大火煮至收汁為止
7. 加入蔥粒, 如喜歡重黑椒味可在這時加些現磨黑胡椒碎, 兜2下後熄火

Ingredients:
1. Garlic … 3 cloves
2. Onion … 1pc
3. Spring onion … 2pcs
4. Beef (I used beef sirloin but you can use any kind of beef steak or beef tenderloin cubes instead) … 1lb
5. Potato … 2pcs
6. Oil

For beef marinate:
1. Corn starch … 1tbs
2. Cooking wine … 1tbs
3. Soy sauce … 1tbs
4. Dark soy …half tbs
5. Black pepper powder … a third of a teaspoon

Seasoning sauce :
1. Soy sauce … 2tbs
2. Dark soy sauce … 1tbs
3. Brown sugar …1 teaspoon
4. Black pepper powder … ½ teaspoon
5. Water … 100 ml

Steps:
1. Chop up spring onion and onion in small pieces; chop up the beef into big chunks and marinate with the ‘beef marinate seasonings‘; chop up potato in cubes, garlic chop into half
2. Mix the ‘Seasoning sauce' In a separate bowl
3. Use High heat, add more oil in the pan, sear the beef for 2.5-3mins till it gets brown, then remove them from the pan
4. Add potato and fry it until brown, then remove them from the pan
5. Remove excess oil from pan, add garlic and onion, stir until fragrant then add potato, beef and the ‘seasoning sauce‘ into pan until the sauce gets thickened
6. Add spring onion into the pan; if you like a stronger black pepper flavor, you can also ground some black peppercorn into the pan, stir for 1-2 seconds more then its ready
