**如果外面買回來的墨魚膠口感太彈牙,可先加入少量蛋白攪拌,這樣蘿蔔糕蒸出來會比較柔軟。

*這食譜的墨魚滑: 蘿蔔比例為1:1,喜歡吃更多蘿蔔的朋友可自行調教比例,但注意材料越多,墨魚滑會較難黏合所有材料。

Ingredients 材料:
25g 蝦米 dried shrimps
1 乾貝 dried scallop
2 冬菇 dried shiitake mushrooms
1 臘腸 chinese sausage
280g 墨魚滑 cuttlefish paste
280g 白蘿蔔 turnip
1/4 tsp 鹽 salt
1/4 tsp 胡椒粉 white pepper

1. 將蝦米、香菇和乾貝用水泡軟。
2. 臘腸以熱水煮3分鐘清洗軟化。
3.香菇切碎、臘腸切粒、蘿蔔分別切粗、幼條。
4. 將臘腸和蝦米以小火爆香。 小火炒蘿蔔至軟身。
5. 將墨魚滑與香菇、蘿蔔絲、2/3的臘腸和蝦米混合。 用剩餘的臘腸和蝦米裝飾。
6. 蒸30分鐘。
7. 食用前,將蘿蔔糕切塊,放入不粘鍋中以小火煎兩面至金黃色。

1. Soak dried shrimps, shiitake mushrooms and dried scallop in water for softening.
2. Boil Chinese sausage for 3 mins for cleaning and softening.
3. Cut mushrooms, sausage and turnip.
4. Sauté sausage and dried shrimps until aromatic. Stir fry turnip strips on low heat until softened.
5. Combine cuttlefish paste with mushrooms, turnip strips, and 2/3 of the Chinese sausage and dried shrimps. Garnish with remaining sausage and dried shrimps.
6. Steam for 30 mins.
7. Before serving, cut the turnip cake in pieces and fry both sides in a non stick pan on low heat. Enjoy.
