這是我爺爺40年前教我做的食譜,在我的家鄉非常受歡迎的美食。
這個食譜揉麵不需要揉出麵筋,製作很簡單方便。亞麻籽餡料炒香以後變得非常美味,富有香氣。
食譜裡用半燙面的方法製作麵團,所以這個麵包非常柔軟,放涼後吃也是軟的,不會回硬。

食譜:
麵團110克*6個

中筋麵粉 400克
酵母3克
鹽1克
白糖5克
食用油10克
熱水80克
室溫水170克

餡料:
亞麻籽 (或者黑芝麻) 100克
白糖90克
食用油50克

Tips:
發酵時間
室溫28°C
第一次麵團發酵40分鐘
第二次發酵時間30分鐘

手揉時間:
揉麵5分鐘後靜置5分鐘
再次揉面1分鐘即可

餡料製作Tips:

*亞麻籽中小火炒香
參考時間:4~5分鐘

*亞麻籽不用磨太細

平底鍋烙餅時間:
中小火
第一面1分鐘
第二面2~3分鐘
翻回來第一面 2~3分鐘

This is a recipe my grandpa taught me to make 40 years ago, a very popular food in my hometown.
This recipe does not need to knead the gluten, it is very simple and convenient to make. The flaxseed filling becomes very tasty and fragrant when it is fried until fragrant.
The recipe uses the semi-boiled method to make the dough, so this bread is very soft, and it will be soft to eat after it is cooled, and it will not become hard.

Recipe:
Dough 110g*6

All purpose flour 400g
Instant yeast 3g
Salt 1g
Sugar 5g
Cooking oil 10g
Hot water 80g
Room temperature water 170g

Filling:
Flaxseed (or black sesame) 100g
sugar 90g
Cooking oil 50g

Tips:
Fermentation time
Room temperature 28°C
The first fermentation time rises for 40 minutes
Second fermentation time 30 minutes

Hand kneading time:
Knead the dough for 5 minutes and let it rest for 5 minutes
Knead again for 1 minute

Tips for making stuffing:

*Sauté the flax seeds over medium-low heat until fragrant
Reference time: 4 to 5 minutes

*You don't need to grind the flax seeds too finely

Sheet Pan Pancake Time:
medium-low heat
1 minute for the first side
2-3 minutes for the second side
Flip back to the first side for 2-3 minutes
