食譜:
麵包6個
烤盤27*38釐米

麵團:
80克*6個

高筋麵粉 260克
牛奶50克 (室溫)
水80克
雞蛋*1 (留10克刷表面)
酵母4克
鹽3克
糖30克
無鹽黃油25克

夾餡:
有鹽黃油5克*6個
(*可用無鹽黃油)

烘烤:
烤箱提前預熱15分鐘
190°C (374°F)
18~20分鐘

過程和Tips:
*️雞蛋帶殼重65克,蛋液55克,留出10~15克刷表面,剩餘40克加入到麵團。
*️麵團裡的雞蛋40克可以用35克牛奶替換

️蛋液混合均勻,留出大約10克刷麵包表面。加入牛奶、水、糖、酵母,攪拌均勻。再加入一半麵粉,拌到基本無顆粒,再加入剩餘的麵粉、鹽,拌勻,再加入黃油,揉麵大約5~10分鐘。
️麵團分割後,搓成6個小球,蓋好表面,室溫30°C發酵30分鐘,再放入冰箱冷藏發酵30分鐘。
或者直接冰箱冷藏發酵2~3小時。
️麵團表面抹油,擀開成長約30釐米,寬8~10釐米的面片,裹入5克黃油包起來。
面片下部切成三條,編辮子。
順勢捲起來捲成麵包卷。
*注意面片尾巴壓在麵包卷的底部,放入烤盤後稍微壓一下。
️烤盤裡發酵50分鐘(參考室溫30°C),室溫不同適當延長發酵時間。發酵好后刷蛋液在表面。
️提前預熱15分鐘烤箱,190°C烘烤18~20分鐘。

Dough:

Bread flour 260g

Milk 50g(room temperature )
Water 80g (room temperature)
Egg*1 (Leave 10g for brushing the surface)
Instant yeast 4g
Salt 3g
Sugar 30g
Unsalted Butter 25g

Baking:
* Preheat oven 15 minutes in advance
190°C (or 374°F)
18~20 minutes

Process and Tips:
*️Egg with shell weighs 65g, egg liquid is 55g, set aside 10-15g to brush the surface, and add the remaining 40g to the dough.
*️ 40 grams of eggs in the dough can be replaced with 35 grams of milk

️Mix the egg mixture evenly, set aside about 10 grams to brush the surface of the bread. Add milk, water, sugar, yeast and mix well. Add half of the flour and mix until there are basically no particles, then add the remaining flour and salt, mix well, then add the butter and knead for about 5 to 10 minutes.
️After dividing the dough, roll it into 6 small balls, cover the surface, ferment at room temperature 30°C for 30 minutes, and then put it in the refrigerator to ferment for 30 minutes.
Or refrigerate directly to ferment for 2-3 hours.
️ Grease the surface of the dough, roll out a dough about 30 cm long and 8-10 cm wide, wrap it in 5 grams of butter.
Cut the lower part of the dough into three strips and braid them.
Roll up and roll into bread rolls.
